Honey is a sweet, syrup-like substance that bees produce from the nectar of flowering plants. The bees collect the nectar and then consume, digest, and regurgitate it inside the beehive to produce honey which is stored in wax-like structures called honeycombs, and then gathered by humans through the practice of beekeeping.
Many types of honey are available, differing based on the plant source, the extraction method, and whether it's raw or pasteurised.
Raw honey has been used as a folk remedy throughout history and has a variety of health benefits and medical uses. It has even been used in hospitals as a treatment for wounds.
The majority of health benefits of honey are specific to either raw, unpasteurised or Manuka. Most of the honey you find in grocery stores is pasteurised. The high heat kills unwanted yeast, however can improve the colour and texture, removes any crystallization, and extends the shelf life. Many of the beneficial nutrients are also destroyed in the process.
Though honey is high in sugar and calories, it's still a better choice than refined sugar.

Although the nutrition profile varies depending on the type, a single tablespoon (21 grams) of honey typically has 64 calories and 17 grams of carbs with little to no fat, fibre, and protein.

Research shows that antioxidant compounds in honey called polyphenols may play a role in preventing heart disease. In some forms of traditional medicine, such as Ayurveda, honey is applied directly to the skin to aid wound healing. This is thought to be due to the antibacterial properties of honey and its ability to decrease the growth of microorganisms that could cause infection. Research has also shown that raw honey may kill unwanted bacteria and fungus as it naturally contains hydrogen peroxide, an antiseptic. Its effectiveness as an antibacterial or antifungal varies depending on the honey, but it's clearly more than a folk remedy for these kinds of infections.
Honey is sometimes used to treat digestive issues such as diarrhoea. It's proven to be effective as a treatment for Helicobacter pylori (H. pylori) bacteria, a common cause of stomach ulcers. It's also a prebiotic, meaning it nourishes the good bacteria that live in the intestines, which are crucial not only for digestion but overall health.
Honey is also an old sore throat remedy. Add it to hot tea with lemon when a cold virus hits you. It also works as a cough suppressant. Research has suggested that honey is as effective as dextromethorphan, a common ingredient in over-the-counter cough medication.
