METHOD:

• Preheat fan-forced oven to 200°C. Empty baking mix into a bowl. Add 65-75ml of plant based milk and mix using your hands until a smooth dough forms.
• Using your hands, divide and roll the cookie dough into 10 equal sized balls (wash your hands with water if dough starts to stick).
• Lightly oil a non-stick tray then press cookie dough balls down with your hand to form 10 equal sized flat cookies (approx 6cm).
• Bake for 8-10 minutes at 200°C, then remove to cool. Cookies may be soft to touch once out of the oven, they will then go firmer once cooled.
• Keep baked cookies in a sealed container in the fridge and consume within 3-5 days. Can be frozen and enjoyed later.
