This basic bean mix is a delicious and highly nutritious vegan staple. Eat it for breakfast, lunch or dinner. Add in avocado, hummus, salsa, hot sauce or vegan cheese to jazz it up. Toast it in a sandwich press, add it to a wrap with fresh salad or use it as the base to a killer good Buddha bowl or Nachos. Hot tip is to double the recipe and freeze half for later. Enjoy!! -Lisa

Vegan, GF, Onion & Garlic Free Option, Freezer Friendly
Ingredients
- 1 brown onion diced or 3 sticks of spring onion (exclude for onion & garlic free option)
- 1 tsp Spiral minced garlic
- ½ tsp Global Organics ginger powder
- 1 tsp Global Organics cumin powder
- 1 tsp Global Organics coriander powder
- 1 tsp Global Organics smoked or sweet paprika
- 1 tbsp. Global Organics tomato paste
- ¼ cup Lotus Yeast Flakes Savoury
- 2 cans Global Organics cannellini beans
- 2 cans Global Organics kidney beans
- 350g jar Absolute Organics sweetcorn
- 2 cups Massel Liquid Vegetable Stock or equivalent stock cubes
- GF Precinct wraps
- Spinach leaves or fresh salad to serve
Method
- Spray or add cooking oil of your choice to a large pan
- Cook onion for 3 minutes on medium heat, stirring occasionally
- Add garlic, spices, tomato paste and savoury yeast flakes and cook for 1 minute until fragrant.
- Thoroughly rinse canned beans and add to pan. Coat beans in spice mix
- Rinse and add jar of corn
- Add 2 cups of vegetable stock and simmer for 20 minutes stirring occasionally. Add more water if sticking
- Add bean mix to a wrap with spinach leaves and press to toast in a sandwich press OR
- Add to a wrap with fresh salad
- Optional extras- avocado, hummus, hot sauce, vegan cheese.
